Ingredients
800 gram Four Bean Mix-rinsed
2 medium Spring onion-thinly sliced
0.5 Red Onion-thinly sliced
0.5 cup Capsicum-chopped, char-grilled
0.25 cup Vegetable oil
2 tbsp Red wine vinegar
1 Garlic Clove-crushed
125 gram Corn kernels-rinsed
Directions
- Place bean mi, green onion, red onion, capsicum and corn in a bowl
- Whisk oil, vinegar and garlic in a jug. Season
- Pour over bean mixture; toss to combine.
- Cover with plastic food wrap; chill for 2 hours to marinate. Serve
Notes
- Makes a great side dish with any Mexican dish
- Add a tin of tuna for a great lunch time meal
