  • 350 g 350 chicken thigh fillets, cut into chunks
    (or use leftover roast chicken or BBQ chicken)

  • 100 g 100 smoky chorizo, sliced thinly

  • 1/4 cup 1/4 long grain rice

  • 1 1 brown onion, diced

  • 2 2 garlic cloves, crushed

  • 1 1 red capsicum, diced

  • 400 g 400 tin diced tomatoes

  • 2 cups 2 chicken stock

  • 1 tbsp 1 tomato paste

  • 1 tsp 1 smoked paprika

  • 1 tsp 1 sweet paprika

  • 1/2 tsp 1/2 dried oregano
