Ingredients

  • 250 gram Philladelphia Cheese

  • 2 Eggs

  • 0.5 cup Sugar

  • 0.5 cup Milk

  • 1 tsp Vanilla extract

  • 6 Butternut Snap Biscuits

  • 2 tbsp Golden Syrup

Directions

  • Preheat oven to 160 degrees.
  • Place six teacups on a flat baking tray.
  • Put a tiny dollop of syrup in the bottom of each teacup and place the butternut cookie on top (the syrup is to hold the biscuit down during cooking).
  • In a food processor, place the cream cheese, eggs, milk, sugar and vanilla. Process until nice and smooth.
  • Pour the mixture into each of the teacups, leaving a good 1.5cm room for rising in each cup (depending on the size of your teacup – you may be able to make more than 6).
  • Cook for approximately 25 minutes – top should start rising and will brown slightly. Turn off oven but leave cheesecakes in the cooking oven for another 20 minutes.

Notes

  • Teacup-Baked Cheesecakes are not suitable for freezing.
  • Serve with a dollop of cream, ice cream, blueberries or anything you want, really!
  • Will store well in an airtight container in the fridge for up to a week.
