Ingredients

  • Base:
  • 250 g plain sweet biscuits (e.g. Arnott’s Nice), crushed

  • 100 g unsalted butter, melted

  • Filling:
  • 500 g cream cheese, softened

  • 300 ml thickened cream

  • 100 g caster sugar

  • 3 tbsp gin

  • 2 tbsp tonic water

  • Zest of 1 lime

  • Juice of ½ lime

  • 3 tsp gelatine powder

  • 2 tbsp boiling water

Directions

  • Grease and line the base of a 20cm springform tin.
  • In a mixing bowl, combine crushed biscuits and melted butter.
  • Press firmly into the base of the tin and refrigerate while you prepare the filling.
  • In a small bowl, dissolve gelatine powder in boiling water. Let cool slightly.
  • Beat cream cheese and caster sugar together until smooth.
  • Add gin, tonic water, lime zest and juice. Mix until combined.
  • In a separate bowl, whip the cream until soft peaks form.
  • Fold whipped cream and cooled gelatine into the cream cheese mixture.
  • Pour mixture over the chilled base and smooth the top.
  • Refrigerate for at least 4 hours or overnight until set.
  • Garnish with extra lime zest or slices before serving.

Notes

  • Not suitable for children due to alcohol content.
  • For stronger flavour, increase gin to 4 tbsp—but reduce tonic slightly.
  • Use a botanical-style gin like Four Pillars or Bombay Sapphire for a citrusy lift.
  • Store in fridge and consume within 3 days.
  • For a non-alcoholic version, swap gin and tonic for lemon-lime soda and extra lime juice.
