No Bake Strawberry Cheesecake

Delicious no-bake strawberry cheesecake with fresh strawberries on top. Perfect for easy summer dess.

I do love a cheesecake that doesn’t need to be cooked.

This is just a very basic no-bake strawberry cheesecake recipe – nothing fancy – but it is creamy and delicious and a great way to use up ripe strawberries when they are in season.

The best thing of all is that this recipe can be frozen – so you can enjoy Strawberry Cheesecake all year round if you wish!

A creamy cheesecake topped with fresh strawberries on a biscuit base. Sweet, tangy, and an effortless no-bake dessert.

Ingredients

  • 500 gram Strawberries (washed and halved)

  • 395 gram Condensed milk (1 tin)

  • 500 gram Cream cheese

  • 1/4 cups Lemon juice

  • 2 tsp Gelatine powder

  • 1/2 cups Icing Sugar

  • Biscuit Base

  • 250 gram Nice Biscuits

  • 80 gram Butter (melted)

Directions

  • Add the Nice Biscuits to a food processor and pulse until they resemble breadcrumbs.
  • Pour into a bowl.  Add the melted butter and mix well.
  • Pour the breadcrumb mixture into a 22cm Springform Pan lined with baking paper.
  • Press the base down into the pan with the bottom of a glass so it becomes firm.
  • Refrigerate until needed.
  • Dissolve the gelatin in a few tablespoons of hot water.  Set aside.
  • Clean out the food processor and add the cream cheese, condensed milk, lemon juice, icing sugar and strawberries.
  • Process until the mixture becomes smooth.
  • Pour in the gelatin mixture and again process until smooth.
  • Pour over the biscuit base and refrigerate until set (about two hours or overnight).

Notes

  • Keep the No Bake Strawberry Cheesecake in the fridge for up to four days.
