Ingredients
1 cup Oats
1 cup Plain Flour
1 cup Brown Sugar
3/4 cup Desiccated Coconut
125 grams Butter
2 tablespoons Golden Syrup
2 teaspoons Bicarbonate of Soda
2 tablespoons Hot Water
Directions
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the oats, plain flour, brown sugar, and desiccated coconut.
- In a small saucepan, melt the butter and golden syrup over low heat.
- In a small bowl, mix the bicarbonate of soda with hot water, then add to the butter mixture.
- Pour the butter mixture into the dry ingredients and mix well.
- Drop tablespoons of the mixture onto a greased baking tray, leaving space for spreading.
- Bake for 12-15 minutes or until just browned.
- Transfer the Anzac biscuits to a wire rack to cool completely.
Notes
- Anzac Biscuits can be stored in an airtight container for up to one week.
- These biscuits are suitable for freezing for up to four months.
- For a chewier texture, reduce the baking time slightly.
- Ensure the butter mixture is well combined with the dry ingredients to avoid uneven spreading.
- For a crispier biscuit, flatten the mixture slightly before baking.
