How to Make Traditional Chickpea Hummus

Ingredients
2 tsp Olive oil
1 medium Onion -chopped
2 number Garlic cloves-crushed
5 tsp Cumin
840 gram Chickpeas-drained
0.5 cup Tahini
0.5 cup Lemon juice
1 tbsp Coriander-fresh, chopped
0.75 cup Buttermilk
1 tsp hot Paprika-optiona
Directions
- In a small saucepan, cook the onion and garlic stirring until the onion is soft.
- Add the cumin and cook stirring continuously until fragrant.
- Turn off heat and leave to cook for about 5 minutes.
- In a food processor, blend the chickpeas, tahini, lemon juice, coriader, paprika, buttermilk and onion mixture until smooth.
- Serve in a bowl with a drizzle of olive oil.
Notes
- Hummus is not suitable for freezing though will keep refrigerated in an airtight container for up to 5 days.

This made a HUGE amount of hummus. Unless you were catering for a party, I’d make half the amount.
Next time I think I’ll add a touch more lemon and garlic. Kids loved it though.
