Ingredients

  • 2 tbsp Butter, unsalted

  • 1 Onion, diced

  • 1 tbsp Plain flour

  • 2 medium Potatoes-peeled and diced small

  • 4 cups Vegetable stock

  • 500 gram Frozen peas-defrosted and drained

  • 0.5 cup Cream

  • 2 tbsp Fresh dill-chopped finely

  • 1 tsp Salt and black pepper-to taste

Directions

  • In a heavy-based pan on a medium heat, add the butter and melt. Once melted, sauce the onion until soft and translucent, around 8 minutes.
  • To this sprinkle in the flour and cook, regular stirring, for several minutes. Then add in the diced potatoes and vegetable broth, and bring up to a simmer.
  • Continue to simmer until potatoes are tender, around 7-10 minutes.
  • Add the peas and simmer for an additional 2-3 minutes.
  • Cool soup slightly (to the specifications of your food processor) and then puree the soup. If you have an immersion blender, you can do this in the pot, otherwise divide into batches and puree.
  • Once pureed, add the soup back to the pot and stir through the cream and dill. Season as desired with salt and pepper, then serve.
