Easy Marinated Olives

Green olives marinated in oil with herbs and spices.

Easy Marinated Olives is an easy recipe, although you do need time for the flavours to mature through the olives.

If you have always loved the delicious flavour of olives that you buy from local markets (the Fremantle Markets have damn delicious marinated olives that are to die for!) – than why not try making them yourself at home.

Ingredients

  • 160 gram Black olives

  • 160 gram Green olives

  • 2 Strips Lemon rind-thinly sliced

  • 2 Strips Orange rind-thinly sliced

  • 2 Garlic cloves-thinly sliced

  • 1 Green onion-finely chopped

  • 0.25 cup Olive oil

  • 2 Thyme sprigs

Directions

  • Place all ingredients into a bowl and stir a couple of times for 4 hours, this lets the flavours develop.

Notes

  • Not suitable for freezing
  • Stores for up to 1 week in an airtight container in the fridge.
