Who is a fan of Tuna Salad for lunches?

I’m not a huge fan of tuna on its own, kinda reminds me of cat food. However, quite often I buy those little tins of ‘tuna salad’ with tuna, corn kernels and mayonnaise and I love it smothered on fresh bread with butter and it is totally divine.

But at $1.50 or so a can – it can really add up. So I thought, why not make it at home? Here’s how to make it (I bulk it up even further with pasta so it can be a meal on its own!) – and it lasts up to three days in the fridge!

Ingredients

  • 1 cup macaroni noodles-dried

  • 0.5 cup Egg mayonnaise

  • 200 gram Tuna-drained and flaked

  • 1 Celery stick-chopped finely

  • 1 small Tin corn kernels-drained

  • 1 bunch Shallots (to sprinkle)-chopped finely

Directions

  • Cook the pasta according to the directions and drain well.
  • Mix all the ingredients together in a bowl and spread on fresh bread or serve as a light meal.
  • Cheap, frugal and delicious!

Notes

  • Tuna Salad for Lunches is not suitable for freezing
  • To store, seal in an airtight container in the coldest part of the fridge for up to three days.
