I do love a good Quiche, the the Lorraine kind full of delicious cream is so naughty – but so damn delicious. Ingredients

  • 1.5 Shortcut pastry sheets

  • 3 Egg yolks

  • 1 Egg

  • 300 ml Light cream

  • 200 gram Diced bacon

  • 0.5 tsp Nutmeg

  • 1 tsp Salt & pepper to taste

  • 150 gram Gruyere cheese

Directions

  • First, prepare the shortcrust pastry and let it sit on the bench for 5 minutes to defrost. If preparing your own pastry prepare as per directions and allow to sit in the fridge for 40 minutes before working on a floured bench.
  • Remove the paddle from the bowl.
  • Cut the pastry to fit the bottom of the bowl, keeping in mind that the circle of dough must cover the bottom of the bowl, up the sides and extend over the edge about 2 cm. Set aside and prepare bowl.
  • Cut a piece of baking paper slightly larger than the dough and put in the bowl. Place the dough in bowl and make sure it sticks well to the bottom and sides of the bowl. Prick the dough with a fork.
  • Beat the egg yolks & egg together with the cream, nutmeg, salt and pepper in a mixing bowl with a fork until well combined.
  • Grate the Gruyère cheese and set it aside.
  • Arrange the grated cheese on the dough, cover with the egg and cream mixture and add the cubes of smoked bacon. Trim the edges with a knife and cut off any excess dough.
  • Close the lid, set the thermostat dial to position 3, press the bottom heating element button and press the on/off button.
  • Cook for 20 min. and then turn the quiche 180° (using the baking paper).
  • Cook for another 10 min.

Notes

  • DeLonghi Quiche Lorraine is suitable for freezing for up to 2 weeks. Keep refrigerated for up to 2 days in an airtight container.
  • If you don’t have Gruyere cheese you substitute with the same amount of grated tasty cheese.
