Pistachio Crusted Salmon

Delicious pistachio crusted salmon fillet, perfect for a healthy dinner.

I’m a massive sucker for salmon. Not only is it healthy and packed with omega 3, but it is also just so tasty! And these hot summer months are the perfect time to enjoy this delicious salmon dish with a twist. All it takes is 25 minutes to cook up this pistachio crusted salmon recipe using the revolutionary De’Longhi MultiFry, a low oil cooker and multi-cooker in one. And the best part about it is you can add the salmon to the cooker, turn the nozzle and walk away. No need to add extra oil and sit by the frying pan, making sure the salmon doesn’t burn. So go and enjoy that white wine while your salmon cooks. And have one for me too.

Want to hear the even better news? This pistachio crusted salmon recipe only has 344 calories per serve. Bonus.

Faster, Healthier, Tastier Pistachio Crusted Salmon

Any cooking device that makes meal preparation easier is ace in my books. And the De’Longhi MultiFry delivers! You can create healthy meals for your family, from salmon to cakes, from quiches to risotto with no oil. The De’Longhi MulitFry features a removeable mixing paddle that automatically stirs the food for you. Or, take the mixing paddle out, like with the recipe below, and use the cooker as you would a frying pan or oven, but without the need to constantly check it and add extra oil. The surround heating technology cooks family favourite meals faster than traditional cooking methods and the non-stick ceramic bowl makes clean ups a breeze.

Ingredients

  • 600 gram Salmon Fillet

  • 50 gram Pistachio nuts

  • 1 tsp Olive Oil

  • Salt, to taste

Directions

  • Remove the paddle from your De’Longhi MultiFry
  • Line the bowl with baking paper and set the fillet on top (it can be cooked whole or portioned into 4 pieces).
  • In a food processor, chop the pistachios. If you don’t have a food processor, a blender will work too.
  • Oil the upper part of the fish and season with salt (just a little because the pistachios are already salty) and cover with the chopped pistachios.
  • Close the lid on your MultiFry and set the thermostat dial to position 3.
  • Press the bottom heating element button and press the on/off button.
  • Cook for 25 min.

Notes

  • Pistachio Crusted Salmon is a beautiful and healthy meal to cook for your family. Pair it with mashed potatoes and a crispy summer salad.
  • This is also a great recipe to an extra fancy BBQ to really impress your friends.
  • Not a fan of pistachio nuts? Try swapping pistachios for cashews. Or, for a nut-free version, squeeze a bit of fresh lemon juice onto the salmon after you take it out of the MultiFry.
