Ingredients

  • 4 meringue nests* -roughly chopped

  • 0.5 cup caster sugar*

  • 2 tsp vanilla extract*

  • 300 gram cherries* -pitted and

Directions

  • In a small saucepan combine the sugar and 1/2 cup of warm water over low heat. Stir until the sugar is dissolved.  Increase the heat to medium and simmer without stirring for five minutes or until the syrup thickens.
  • Add the vanilla extract and cherries.  Increase the heat to high and simmer for one to two minutes and remove from the heat and allow to cool completely. Mix together the cream and the chopped meringue.
  • Very gently fold through the cherry syrup (don’t totally combine) and heap into four glasses. Top with a decorative meringue if desired. Serve the cherry eton mess immediately.

Notes

  • Cherry syrup can be made up to a day ahead and kept refrigerated until needed.
  • Cherry Eaton Mess should be made up just before serving.
