Gluten Free Fruit Crumble

Gluten Free Fruit Crumble tastes just like the normal one only better for your digestive system if you are gluten intolerant. My family loves any kind of crumble, but when grandma comes around we need to have a gluten free one and this one  is just the ants pants.

Ingredients

  • 2 apples, peeled and cored

  • 2 pears, peeled and cored

  • 2 cups frozen berries

  • 0.25 cup caster sugar

  • 0.25 cup water

  • 0.5 cup almond meal

  • 0.33 cup cornflour

  • 0.33 cup brown sugar

  • 1 tsp cinnamon

Directions

  • Dice apples and pears.
  • Combine apples, pears, sugar and water in a saucepan.
  • Cook, covered, for about 10 minutes or until the fruit is just tender. Drain and discard liquid.
  • Place apple and pear mixture in a deep ovenproof dish and add berries. Mix to combine.
  • In a large bowl, mix almond meal, cornflour, brown sugar, butter and cinnamon until combined. Sprinkle topping over fruit.
  • Bake at 180 degrees for 20-25 minutes. Serve hot.

Notes

  • Make sure the cornflour is gluten free and NOT wheaten cornflour.
  • Arrowroot flour could be used instead of cornflour.
  • The fruit combination is entirely up to you. For low allergen go for pear on its own, or if you can’t get good frozen berries use a few fresh ones.

    Hi there. This looks yummy! My bots have a few other intolerances, how do you think it would go with all pear and no apple? just not sure if apple thicker than pear so that may make a difference. Though thinking i could try it with rhubarb and pear base with the berries on top… and do you think using arrowroot flour rather than cornflour to thicken it would matter?
