Gluten Free French Onion Soup

Ingredients
2 number Brown onions
2 number White onions
2 number Red onions
4 number Garlic cloves -minced
2 tbsp Olive Oil
2 tsp Fresh Parsley
2 tsp Thyme
1 number Bay leaf
4 cups Chicken stock
4 cups Beef Stock
0.5 tsp Balsamic vinegar
2 cups Cheese (tasty)-grated
number Salt and pepper-to taste
8 number Slices gluten free bread
Directions
- Peel and cut the onions into half moons and place in the slow cooker.
- Add garlic and toss with oil.
- Cover and cook on high for 8 hours.
- Place the chicken and beef stock in the microwave or on the stove top and heat through.
- Add to the onions in the slow cooker.
- Sprinkle parsley, thyme and bay leaf into soup mix, cover and cook for a further 20 mins.
- Remove the bay leaf, add salt and balsamic vinegar.
- Just before serving the soup, preheat your grill and toast the slices of bread.
- Sprinkle with cheese and toast again until the cheese has melted. Ladle soup into bowls and top with bread and cheese.
