Ingredients

  • 2 number Brown onions

  • 2 number White onions

  • 2 number Red onions

  • 4 number Garlic cloves -minced

  • 2 tbsp Olive Oil

  • 2 tsp Fresh Parsley

  • 2 tsp Thyme

  • 1 number Bay leaf

  • 4 cups Chicken stock

  • 4 cups Beef Stock

  • 0.5 tsp Balsamic vinegar

  • 2 cups Cheese (tasty)-grated

  • number Salt and pepper-to taste

  • 8 number Slices gluten free bread

Directions

  • Peel and cut the onions into half moons and place in the slow cooker.
  • Add garlic and toss with oil.
  • Cover and cook on high for 8 hours.
  • Place the chicken and beef stock in the microwave or on the stove top and heat through.
  • Add to the onions in the slow cooker.
  • Sprinkle parsley, thyme and bay leaf into soup mix, cover and cook for a further 20 mins.
  • Remove the bay leaf, add salt and balsamic vinegar.
  • Just before serving the soup, preheat your grill and toast the slices of bread.
  • Sprinkle with cheese and toast again until the cheese has melted. Ladle soup into bowls and top with bread and cheese.
