Ingredients
125 gram Copha
0.5 cup Icing Sugar
200 gram White Chocolate
1 cup Coconut-shredded
3 cups Rice bubbles
.75 cup Dried fruit
Directions
- Line a 30cm x 20cm lamington pan (or similar) with baking paper.
- In a saucepan heat (over medium) together the chocolate and copha until all melted.
- In a large bowl, combine the dry ingredients together well – pour in the wet mixture and stir to combine.
- Spread the mixture over the baking paper and gently press down.
- Cover with plastic wrap and refrigerate until set.
- When set, cut into squares or bars and enjoy.
Notes
- White Chocolate Rice Bubble Slice is suitable for freezing for up to 3 months, place a sheet of GLAD Go-Between paper in between each layer.
- Keep in an airtight container for up to 1 week in a cool dry place.
- You can leave out the dried fruit if you family is not a fan.
