Ingredients

  • 2 cups Strawberries-destemmed and halved

  • 0.25 cup Maple syrup-optional

  • 2 tsp Lime Zest-to taste

  • 1 tbsp Lime juice-to taste

  • 2 tbsp Chia seeds

Directions

  • Pop the chopped strawberries, the lime zest, the lime juice, the chia seeds and, if you’re using it, the maple syrup, into a blender. You might also need to add a few tablespoons of water to help with the blending. Pulse on high until the strawberries are well blended.
  • Pour the mixture from the blender into a small saucepan and heat on a medium heat until it starts to bubble. Reduce the heat and simmer the mixture until the jam starts to thicken, about 5-7 minutes.
  • Remove from heat and immediately pour into a thick sided jar. Allow to cool completely before storing in the fridge for up to one week.
