Italian Amazeballs

Ingredients
500 gram Beef mince
1 Onion-Diced
4 Clove Garlic (Minced)
1 Egg-lightly beaten
0.66 cup Fresh Breadcrumbs
1 cup Ricotta cheese
0.33 cup Parmesan cheese
2 tsp Fennel Seeds
0.5 cup Parsley, basil & rosemary-finely chopped herbs
0.5 cup Pine Nuts-chopped
1 gram Lemon juiced and zest
0.25 cup Oil-for fryingSauce
2 Tin tomatoes-425 gram
0.5 cup Red wine
Directions
- Mix all meatball ingredients together in a large bowl, use your hands to mix until well combined.
- Roll 1 tablespoon of mixture into a ball until all mix is used. Heat oil in large frypan over medium to high heat.
- Add meatballs, cook for 10 minutes turning occasionally to brown sides evenly.
- Pour tomatoes and red wine over with a lid and cook for a further 10 minutes.
- Serve with cooked pasta or prepare a nice fresh garden salad.
Notes
- Italian Amazeballs is suitable for freezing for up 6 months or keep refrigerated for up to 3days in an airtight container.
- If you have some fussy little people you can put herbs and pine nuts in the blender and make into a paste the flavour with still be there but they won’t see any ‘bits’!
