When I think Waldorf Salad, I think crunchy fresh apples and walnuts – and even though this salad is now considered tremendously old fashioned, it is still a firm family favourite!

But when served in Cos Lettuce leaves so you can just pick up a ‘boat’ and inhale it – even better!

Ingredients

  • 2 number Pink Lady Apples

  • 2 number Celery stalk-washed and chopped

  • 2 tbsp fresh Orange-lemon or lime juice

  • 0.5 cup Walnuts-chopped

  • 0.25 cup Mayonnaise

  • 1/2 number Baby cos lettuce

Directions

  • Core the pink lady apples and chop into pieces.
  • Place the apple pieces in a small bowl and mix with the orange juice to prevent browning.
  • Lay the freshly washed cos lettuce on a place and combine the remaining ingredients before placing them on top of the lettuce.
  • Recipe Hints and Tips:
  • Waldorf Salad is best served immediately.
  • Mayonnaise can be substituted with natural yoghurt or sour cream.
  • Make your own mayonnaise, it’s easy and much nicer than the shop bought variety!
