Ingredients

  • 200 gram Couscous

  • 1.5 cups Boiling Water

  • 0.5 cup Cheese (pickled onion cheese)

  • 300 gram Tuna in Springwater

  • 1 cup Olives and sundried Tomatoes

Directions

  • Boil kettle, pour 1 1/2 cups of boiling water over cous cous in medium bowl.
  • Place lid on or cover with cling wrap allow to stand for 5 minutes.
  • While cous cous is soaking, roughly dice olives, sundried tomato and cheese, drain tuna and add all ingredients into large bowl.
  • Once 5 mintues is up remove lid from cous cous and toss through the remaining ingredients until mixed.
  • Serve with a drizzle of mayonnaise or on it’s own.
  • Recipe Hints and Tips:
  • Simple Antipasto Cous Cous is not suitable for freezing though can be stored in fridge in an airtight container for up to 2 days.
  • To make this even easier you can buy the antipasto mixes from the deli section at your local supermarket then it would be 3 ingredients for a fast healthy lunch or dinner!
