Ingredients

  • 800 gram Four Bean Mix-rinsed

  • 2 medium Spring onion-thinly sliced

  • 0.5 Red Onion-thinly sliced

  • 0.5 cup Capsicum-chopped, char-grilled

  • 0.25 cup Vegetable oil

  • 2 tbsp Red wine vinegar

  • 1 Garlic Clove-crushed

  • 125 gram Corn kernels-rinsed

Directions

  • Place bean mi, green onion, red onion, capsicum and corn in a bowl
  • Whisk oil, vinegar and garlic in a jug. Season
  • Pour over bean mixture; toss to combine.
  • Cover with plastic food wrap; chill for 2 hours to marinate. Serve

Notes

  • Makes a great side dish with any Mexican dish
  • Add a tin of tuna for a great lunch time meal
