This salad is so simple its crazy!! But simple doesn’t mean bland. It makes you feel like you are eating a fresh pizza that’s good for you!! The kids will love it too!

It is an extremely easy salad to quickly put together with only a few ingredients, but it sure does pack a punch. It’s perfect for a quick side dish or to compliment an Italian style meal, thanks to the Bocconcini.

Use it for lunch the next day or a snack from the fridge, either way you’ll love it!

Ingredients

  • 1 Bocconcini Cheese, Sliced

  • 1 Punnet Cherry Tomatoes, Cut in half

  • 1 Handful Basil

  • 2 tbsp Olive oil

Directions

  • Place the Bocconcini Cheese and tomatoes in a bowl and toss through
  • Top the salad with the basil and drizzle with olive oil.
  • Serve and Enjoy!
