Crispy Chicken Rolls

Ingredients
0.33 cup Mango Chutney
1 tbsp Sour cream
2 number Spring Onions-chopped finely
8 number Filo Pastry
4 number Chicken breasts-whole, skinless
60 gram Butter-melted
Directions
- Heat your oven to 180 degrees C and lightly grease an oven tray
- Mix chutney, sour cream and spring onions in a bowl until combined well
- Lay out one sheet of filo pastry and place another sheet on top. Fold in half lengthways
- Place a chicken breast at one end of the pastry and spoon 1/4 of the chutney mix onto the chicken.
- Roll the pastry once over the chicken, fold the sides over and keep rolling to make a parcel.
- Repeat this process to make 3 more chicken parcels
- Place the parcels on the oven tray and brush with the melted butter
- Bake for 20 mins or until golden brown. Serve hot with salad or steamed vegetables.
- Recipe Hints and Tips:
- Crispy Chicken Rolls are suitable to freeze for up to four weeks.
- You don’t have to use mango chutney – this recipe would be lovely with tomato chutney or fruit chutney too!
