Crispy Chicken Rolls make a great dinner dish but are also great as party snack foods, as they can be made into any size you like!

Ingredients

  • 0.33 cup Mango Chutney

  • 1 tbsp Sour cream

  • 2 number Spring Onions-chopped finely

  • 8 number Filo Pastry

  • 4 number Chicken breasts-whole, skinless

  • 60 gram Butter-melted

Directions

  • Heat your oven to 180 degrees C and lightly grease an oven tray
  • Mix chutney, sour cream and spring onions in a bowl until combined well
  • Lay out one sheet of filo pastry and place another sheet on top. Fold in half lengthways
  • Place a chicken breast at one end of the pastry and spoon 1/4 of the chutney mix onto the chicken.
  • Roll the pastry once over the chicken, fold the sides over and keep rolling to make a parcel.
  • Repeat this process to make 3 more chicken parcels
  • Place the parcels on the oven tray and brush with the melted butter
  • Bake for 20 mins or until golden brown. Serve hot with salad or steamed vegetables.

  • Crispy Chicken Rolls are suitable to freeze for up to four weeks.
  • You don’t have to use mango chutney – this recipe would be lovely with tomato chutney or fruit chutney too!
