Ingredients
300 gram Macaroni-cooked
180 gram Cherry tomatoes-1 punnet
180 gram Baby spinach
4 number Shallots-finely chopped
250 gram Ham-diced
1 cup Breadcrumbs
0.5 cup Cheese-grated
Sauce
80 gram Butter
1.5 cups Milk
3 tbsp Flour
1 cup Cheese-grated
1 tbsp Dijon mustard
1 tbsp Seeded mustard
Directions
- Melt butter in saucepan and add flour and whisk. Cook for 2 minutes stirring and whisking. Slowly add milk and stir with whisk over medium heat. Keep whisking for 3 minutes until sauce starts to thicken. Add cheese and mustard and stir through.
- Mix sauce into the macaroni, stir through spinach, shallots, ham and tomatoes and pour into a greased pie dish. Top with breadcrumbs and cheese and bake for 25 minutes at 180 degrees until golden brown.
Notes
- Recipe Hints and Tips:
Schmancy Macaroni Cheese is not suitable for freezing. It may be kept sealed in an air tight container in the fridge for up to three days.
For a vegetarian version, feel free to leave out the ham.
