Now, I’m not a big fan of lettuce, so for years I never tried Sang Choy Bow because I thought that is all you could taste.
Imagine my surprise when I did finally taste it – now it is a ‘Friday Night’ food with things like tacos or pizza – and the kids love it! I love food you can eat with your hands!

Ingredients

  • 500 gram Pork Mince -or chicken mince.

  • 1 Onion-diced finely

  • 2 tsp Sesame oil-(or substitute with olive oil)

  • 2 tsp Crushed Garlic

  • 1 cup Bean Sprouts

  • 2 Spring Onions-sliced on the diagonal

  • 0.5 Red Capsicum-diced finely

  • 2 tbsp Soy Sauce

  • 2 tbsp Oyster Sauce

  • 1 tbsp Lime Juice

  • 8 large Lettuce cups-washed

Directions

  • Heat your frypan or wok and add the oil.
  • Cook the onion, capsicum, garlic and grated ginger together until soft and fragrant.
  • Add the chicken or pork mince and stir fry until browned and cooked through.
  • Add a splash of water to the mince and pour in the sauces.
  • Cook until slightly thickened.
  • Turn off the heat and throw in the bean sprouts and add the lime juice.
  • Spoon into the freshly washed lettuce leaves (or put it on the table and let everyone help themselves) and top with the spring onions to serve.

Notes

  • Sang Choy Bow is not suitable to freeze,.
  • You can freeze the mince mixture before adding the bean sprouts. Mince mixture is suitable to freeze for up to four months.
