What I Make When I’m Too Tired to Cook: Hashbrown Lasagna

Need a cheap dinner that actually fills everyone up without spending hours in the kitchen?

This crispy hashbrown lasagna has become one of my favourite “I can’t deal with cooking tonight” dinners because it’s filling, comforting, easy to throw together, and always gets eaten.

Unlike traditional lasagna, there’s no boiling pasta sheets or spending forever layering everything perfectly. The hash browns make it crispy, cheesy, and ridiculously satisfying — especially on cold nights or exhausting weekdays.

It’s the kind of low-effort comfort food busy mums keep coming back to when takeaway feels tempting but the grocery budget says otherwise.

Ingredients

  • 1000 gram Mince Beef

  • 1000 gram Hash Brown

  • 2 Onion-diced

  • 4 Garlic Cloves-minced

  • 840 gram Tomatoes – crushed

  • 0.33 cup Gravy powder

  • 0.33 cup Plain flour

  • 1 cup Cheese -grated

  • 1 tbsp Oil

  • White Sauce
  • 1.25 cups Milk

  • 4 tbsp Butter

  • 2 tbsp Plain Flour

Directions

  • Heat frypan with 1 tablespoon oil over high heat, add diced onions and garlic. Stir until lightly browned, add mince and brown.
  • Pour in tomatoes, stir through gravy powder.
  • Add flour to mince and cook off for 2 minutes over medium heat. Set aside.
  • White Sauce
  • Heat saucepan over medium heat, add butter and flour stir until melted and well mixed.
  • Cook for 2 minutes stirring constantly, this will ‘cook off’ the flour flavour.
  • Pour in milk slowly, whisking the whole time to make a smooth paste. Continue to whisk over medium to low heat until sauce thickens.
  • Assemble Lasagne
  • Pour 1/3 of the mince mixture into extra large casserole dish.
  • Top with 1/3 white sauce, sprinkle with grated cheese.
  • Place a layer of hash browns over the white sauce and repeat.
  • Finish the top layer with grated cheese.
  • Bake in oven for 40 minutes until golden brown.

  • bake uncovered
  • let it rest before slicing
