Foil Pocket Chicken and Sweet Potato

Delicious chicken and sweet potato foil pocket with fresh herbs.

Cooking food in a Aluminium Foil Parcel makes it tremendously moist, and it cooks in the oven super quickly.  This is a very basic recipe for Chicken Breast with Sweet Potato, but really you can cook any type of meat and vegetables together, or even add some noodles!

20 minutes is usually all it takes to cook. To make it more fun for the kids, put all the servings in individual foil parcels – just watch their fingers when they are opened after cooking as the steam can burn!!!

Ingredients

  • 4 Chicken Breast

  • 3 Sweet potatoes-peeled & diced

  • 1/2 cups Sweet soy

Directions

  • Preheat oven to 170 degrees.
  • Place Chicken into ziplock bag and add sweet soy to marinate for 10 minutes or even a few hours if you have time.
  • Peel and diced sweet potatoes.
  • Take a large piece of foil and double over, fold edges up to create a ‘bowl’. Make four of these, place a bed of diced sweet potatoes evenly into each foil bowl.
  • Add a chicken breast onto each sweet potato bed, drizzle with marinate. Fold sides up to seal into a parcel.
  • Place foil parcels on a baking tray. Bake for 30 minutes.
  • Unwrap foil and brown for the remaining 10 minutes.
  • Serve with steamed greens.
  • Recipe Hints and Tips:
  • Meat & Vege is not suitable for freezing and best served when made.
  • You can marinate your chicken overnight if stored in the fridge at all times.
  • Feel free to add any other diced vegetables to make it a complete meal.
