Easy Lemon Chicken

Ingredients
2 number Chicken breasts
number Cornflour-to coat the chicken
2 tbsp Oil-to shallow-fry the chicken
1 cup Chicken stock
1 number Lemon (juice)
0.5 tsp Dry ginger
2 tbsp Honey
220 gram Pineapple chunks in juice
number Cornflour-to thicken sauce
Directions
- Cut chicken into bite sized pieces.
- Toss in cornflour until evenly coated and fry in small batches until crispy.
- To make the sauce, bring the stock, lemon juice, honey and ginger to the boil, then simmer for a couple of minutes.
- Add the pineapple and juice of half the tin and bring back to a simmer.
- Taste the sauce to check if its not too lemony or sweet. If it is too bitter add a little more honey to taste or if it is too sweet add a little more lemon.
- Once you’re happy with the taste, combine some cornflour with water and add to the sauce to thicken it.
- Put the sauce over the top of the hot chicken and serve. Serve with a simple Fried Rice.
