Sometimes, when our meals get a little boring, I like to squeeze in some of my favourite mexican recipes just to spice things up.
I adore Mexican food. What’s not to love? It’s probably one of the most flavourful and appetising out of all the foods in the world. It’s also really popular that it’s a staple in some households here in Australia.
Anyway, these are seven of my most favourite Mexican recipes. I love it for the taste and for how easy it is to make. The fact that I can find all the ingredients I need at Woolworths is a huge plus!
Pork Cantinas are so easy to make. If you like it extra spicy, add extra jalapeños or a pinch of cayenne pepper. If you prefer it to be more family friendly leave out the jalapeños.
Ingredients:
2kg Woolworths Boneless Pork Shoulder Roast
1 tbsp Woolworths Oregano Leaves
2 tsps Woolworths Cumin Ground
1 tbsp Macro Organic Extra Virgin Spanish Olive Oil
There are so many reasons why I love this recipe. It’s crispy on the outside, gooey on the inside and flavours are just sooo overwhelming. Best of all, this recipe is super versatile that you can use almost any leftover meat you have and you the cheese level can go from slightly-cheesy to swimming-in-cheese-atm.
You can make this varied by adding almost anything else to the filling on these, so go wild!
This comes out super delicious and tender. It’s the best eaten with tacos. But it’s also yummy when paired with rice, burritos, nachos and quesadillas!
This probably my go-to when I’m starving and would like to eat everything in my bowl. It’s a perfect all-in-one meal. The meat, veggies and spices just makes it all the more appetising!
Mexican fried rice is the winner in the fried rice category for me. It’s probably because it’s the most filling and the flavours of all the ingredients just mix super duper well!
Ingredients:
2 tbsps Olive Oil
3 and 1/2 tsps Garlic (minced)
2 tsps Chili Powder
1 and 1/2 tsp Woolworths Cumin Ground
1 tsp Woolworths Paprika Smoked
1/2 tsp Oregano
1 Onion (diced)
1 large Red Capsicum
2 cups Woolworths Brown Rice Grain (cooked)
600 grams Black Beans about two cans (drained and rinsed)
