Healthy tropical oats with fresh pineapple and shredded coconut.

I love Oats for breakfast – they are easy as well as quick and fill you up for the morning.

These tropical oats have the right balance of flavour and no need for added sugar, as the fresh mango is more than enough sweetness.

Ingredients

  • 1/2 cups Oats

  • 1 cup Coconut milk

  • 1/2 tsp Vanilla

  • 1/2 Mango, sliced

  • 1/4 cups Coconut Flakes

Directions

  • Place oats and coconut milk and vanilla into a saucepan on medium heat and simmer until oats are soft. 3-4 minutes.
  • Using a fry pan place the coconut in dry with no oil.
  • On a medium to high heat gently toast the coconut carefully not to burn it.
  • Once the oats are cooked place into a serving bowl and top with mango and toasted coconut.
  • Enjoy!
