Classic Australian Anzac Biscuits with oats, coconut, and golden syrup, perfect for a sweet treat.

Ingredients

  • 1 cup Oats

  • 1 cup Plain Flour

  • 1 cup Brown Sugar

  • 3/4 cup Desiccated Coconut

  • 125 grams Butter

  • 2 tablespoons Golden Syrup

  • 2 teaspoons Bicarbonate of Soda

  • 2 tablespoons Hot Water

Directions

  • Preheat the oven to 180°C (350°F).
  • In a large bowl, combine the oats, plain flour, brown sugar, and desiccated coconut.
  • In a small saucepan, melt the butter and golden syrup over low heat.
  • In a small bowl, mix the bicarbonate of soda with hot water, then add to the butter mixture.
  • Pour the butter mixture into the dry ingredients and mix well.
  • Drop tablespoons of the mixture onto a greased baking tray, leaving space for spreading.
  • Bake for 12-15 minutes or until just browned.
  • Transfer the Anzac biscuits to a wire rack to cool completely.

Notes

  • Anzac Biscuits can be stored in an airtight container for up to one week.
  • These biscuits are suitable for freezing for up to four months.
  • For a chewier texture, reduce the baking time slightly.
  • Ensure the butter mixture is well combined with the dry ingredients to avoid uneven spreading.
  • For a crispier biscuit, flatten the mixture slightly before baking.
