Ingredients

  • 1 cup 1 rolled oats

  • 1 cup 1 plain flour

  • 1 cup 1 brown sugar

  • 3/4 cup 3/4 desiccated coconut

  • 125 g 125 butter

  • 2 tbsp 2 golden syrup

  • 2 tsp 2 bicarbonate of soda

  • 2 tbsp 2 hot water

Directions

  • Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
  • In a large bowl, combine the rolled oats, plain flour, brown sugar and desiccated coconut.
  • In a small saucepan, melt the butter and golden syrup over low heat.
  • In a small bowl, mix the bicarbonate of soda with the hot water, then stir it into the butter mixture.
  • Pour the butter mixture into the dry ingredients and mix until well combined.
  • Roll tablespoons of the mixture into balls and place onto the prepared tray, leaving space for spreading.
  • Gently flatten slightly if you prefer a crispier biscuit.
  • Bake for 12–15 minutes or until golden brown.
  • Let the biscuits cool on the tray for a few minutes before transferring to a wire rack to cool completely.
