Gluten-Free Anzac Slice (Chewy, Easy, Authentic Aussie Recipe)

Gluten-Free Anzac Slice with a golden, crunchy top and chewy center, perfect for a healthy snack or.

Craving a classic Aussie treat but need to keep things gluten-free? This gluten-free Anzac slice is everything you love about traditional Anzac biscuits — golden, chewy, and full of coconut goodness — but in an easy, no-fuss slice form.

Perfect for lunchboxes, afternoon tea, or sneaky late-night snacks (we won’t judge), this recipe uses simple pantry staples and comes together in under 30 minutes.

What Is Anzac Slice?

If you’ve ever made Anzac biscuits, you already know the magic combo — oats, coconut, golden syrup, and butter. Anzac slice takes those same flavours and turns them into a soft, chewy tray bake instead of individual biscuits.

It’s quicker, easier, and honestly… a bit harder to stop at just one piece.

Ingredients

  • 1 cup Gluten-Free Flour

  • 1 tsp Guar Gum

  • 1 cup Coconut

  • 1 cup Quinoa Flakes

  • 0.75 cup Sugar, brown

  • 125 gram Butter

  • 2 tbsp Golden Syrup

  • 1 tsp Bicarbonate Soda

  • 2 tbsp Water

Directions

  • Preheat oven to 180.
  • Combine flour, gum, coconut and quinoa flakes and sugar into a mixing bowl.
  • Melt the butter over low heat with the water and syrup until all melted and combined.
  • Remove from the heat and add the baking soda to the liquid mix and stir.
  • The mixture will foam, this is normal! Add the foamed mixture to the dry ingredients and combine until all moist (In the past I’ve found that you might have to add a little more syrup/water)
  • Press into a lined slice tray (you can also roll into tablespoon sized balls and press with a fork to make biscuits)
  • Bake for 20-25 minutes for the slice and 8-10 minutes for the biscuits.
