Sunflower Bread
A lovely healthy Sunflower Bread, something a little different. The sunflowers give it a nice texture, add a little butter (or a lot) just after it has come out of the oven and you will be wanting more!

Ingredients
1.25 cups Self-raising flour
1 tbsp Caster Sugar
2 tsp Baking Powder
1 tsp Salt
0.75 cup Polenta-fine
0.5 cup Cheddar Cheese-grated
2 tsp Parsley-Flat-leaf
1 tsp Oregano-dried
2 Eggs
1 cup milk
0.33 cup Sunflower oil
2 tbsp Sunflower seeds
Directions
- Preheat the oven to 180 degrees.
- Grease loaf tin and line the base with baking paper. Sift the flour, sugar, baking powder and salt into a large bowl.
- Add the polenta, cheddar cheese, parsley and oregano.
- Combine the eggs, milk and oil and pour onto the dry ingredients.
- Stir until combined.
- Pour into the tin and sprinkle with the sunflower seeds.
- Bake for 45 minutes, or until a skewer inserted in the centre comes out clean.
