Ingredients

  • 3 tbsp Boiling water

  • 0.5 cup Dates-roughly chopped

  • 1 Butter (30 grams)

  • 2 tbsp Brown sugar

  • 2 tbsp Self Raising Flour

  • Egg-beaten

  • 0.5 tsp Bicarb soda

  • Caramel Sauce
  • 1 butter (30 grams)

  • 1 Vanilla essence

  • 2 Milk

  • 0.5 Brown Sugar

Directions

  • Place the chopped dates, butter and water in a microwave safe bowl or jug
  •  Place in microwave for 1 minute until the dates are softened.
  •  Mix in the bicarb soda to break up the dates
  •  Add the sugar, egg and flour and mix to combine thoroughly
  •  Spoon into two mugs
  •  Place both mugs in the microwave 1 minute and 20 seconds
  •  To make the caramel sauce put  sugar, vanilla, butter and milk in a microwave safe bowl/jug and place in the  microwave for 20 seconds
  •  Remove and stir and repeat 2 more times.
  •  The sugar should be dissolved and the sauce smooth.
  •  As microwaves heat differently, you may need to heat for another 20 seconds if it is not smooth.
  •  Allow to cool for 5 minutes then either drizzle over the puddings and enjoy or tip the puddings out onto a plate,  drizzle with the caramel sauce and add a scoop of ice cream or cream.

Sticky Date Pudding in a Mug is a one cup wonder.

It is a lovely, tender and buttery dessert.Yummy with a dollop of cream or a scoop of vanilla ice cream on top!
