Pumpkin Biscuits are great little treats for Halloween, even if you’re not into it. They are simple to make and provide a healthy after school snack option as well! In fact, these delicious little treats are perfect for anytime of the year. Your kids can even help you whip these Halloween inspired biscuits up as part of your preparation for trick or treating.

Ingredients

  • 1 cup Pumpkin cooked and pureed

  • 3/4 cup Butter

  • 1 tsp Vanilla Extract

  • 1 cup Custard Powder

  • 1 tsp Salt

  • 2 cups Self Raising Flour

  • 1 cup Chocolate Chips

  • 1 tsp Cinnamon

  • 1 tsp Nutmeg

Directions

  • Combine custard powder, pumpkin, butter and vanilla.
  • Add all the other ingredients and mix well.
  • Drop spoonfuls onto a greased or lined tray.
  • Bake at 180 degrees for 15-20 minutes or until lightly golden.

Notes

  • For a healthier version, substitute 1/2 cup of self raising flour for 1/2 cup oats.
  • If the mixture is not ‘sweet’ enough for you, add 1/4 cup brown sugar.

    Just made these as I had pureed pumpkin for another receipe that I could not find an ingredient for so decided on this one. I did not have custard powder so google what the substitute was and got cornflour and vanilla essence. So that is what I have done. Just took out my first batch and they are pretty good, but i think that I should have put in the sugar as my partner has a sweet tooth and I don’t think he will eat these, hopefully the kids will!!
