How to Make Passionfruit Butter

4 Eggs
0.75 cup Caster sugar
4 Passionfruits
100 gram Unsalted butter
Directions
- Whisk together the eggs and caster sugar in a microwave proof jug until well combined. Stir in the pulp of four passionfruit and the chopped butter.
- Microwave uncovered at 30% for 7 – 10 minutes, whisking every minute until mixture is thick enough to coat the back of a wooden spoon.
- Divide into hot sterlised jars. Seal and refrigerate. Makes 1.75 cups.
- To sterilise jars:
- Wash in warm soapy water or put through the dishwasher, rinse in hot water. Place on baking tray and place in the oven at 120 degrees for 20 minutes.
- Makes a terrific gift!
Notes
- Passionfruit butter will keep sealed in the fridge for up to a week.
- Not suitable for freezing.
