How to Make Passionfruit Butter

Get ready to give your taste buds a treat with this delicious (and healthy) alternative to butter. Passionfruit butter is the perfect spread for biscuits, scones and it makes an excellent gift. Ingredients

  • 4 Eggs

  • 0.75 cup Caster sugar

  • 4 Passionfruits

  • 100 gram Unsalted butter

Directions

  • Whisk together the eggs and caster sugar in a microwave proof jug until well combined. Stir in the pulp of four passionfruit and the chopped butter.
  • Microwave uncovered at 30% for 7 – 10 minutes, whisking every minute until mixture is thick enough to coat the back of a wooden spoon.
  • Divide into hot sterlised jars. Seal and refrigerate. Makes 1.75 cups.
  • To sterilise jars:
  • Wash in warm soapy water or put through the dishwasher, rinse in hot water. Place on baking tray and place in the oven at 120 degrees for 20 minutes.
  • Makes a terrific gift!

Notes

  • Passionfruit butter will keep sealed in the fridge for up to a week.
  • Not suitable for freezing.
