Ingredients
Bun 60gram Butter
560 gram Plain Flour
1 tbsp Mixed Spice
1 tbsp Cinnamon
1 tsp Salt
10 gram Dried Yeast
4 tbsp Caster Sugar
150 gram Sultanas
1 number Egg-beaten
Paste for Crosses
2 tbsp Caster Sugar
75 gram Plain Flour
5 tbsp Water
Bun Glaze
2 tbsp Milk
2 tbsp Caster Sugar

Directions
- Preheat oven to 190 Degrees.
- Heat the milk and butter together and leave to cool slightly.
- Sift the flour, spices and salt together.
- Add the sugar, yeast and sultanas.
- Stir in the warm milk and butter and the egg.
- Knead well until smooth (about 10 minutes).
- Cover and leave in a warm place for approximately one hour or until the dough has doubled in size.
- Knead for a few minutes more until smooth.
- Divide into 12 medium sized balls and place on a greased baking tray.
- Cover and leave in a warm place for 10 minutes or until the buns have risen.
- Place the paste for the crosses in a piping bag and pipe crosses on top of the buns.
- How to make Paste: Mix the flour and sugar together and add enough water to make a smooth paste.
- Bake for 15 – 20 minutes at 190 degrees.
- When the buns are still hot from the oven brush with the hot glaze.
- How to make Glaze: Heat the milk and sugar together without boiling.
- Recipe Hints and Tips:
- Cooled buns can be frozen in an air-tight container or zip lock bag for up to six weeks.
- Serve with butter and golden syrup.

Hi can you offer some advice about where I might be going wrong with the crosses on my hot cross buns? they seem to just melt off when I put them in the oven
Hi Tanya, try adding 3 tablespoons of water then see if it is thick like cake mix consistency, if so no more water. Add an extra 1 tablespoon at a time. Sounds like the mix is too runny.
