Ingredients
1 cup Carrot-finely grated
1.25 cups Self raising flour
0.25 cup Pecan nuts-roughly chopped
1 cup Milk
1 cup Raw sugar
1 cup Dessicated coconut
0.25 cup Sultanas
Directions
- Place all ingredients in a bowl and mix until well blended.
- Pour into a greased loaf tin and bake at 180 degrees for 1 hour. That’s it!
Notes
- Easy Carrot and Pecan Loaf freezes well. Cool to room temperature and double wrap in plastic wrap.
- Freeze for up to two months.
