Ingredients

  • 1 cup Carrot-finely grated

  • 1.25 cups Self raising flour

  • 0.25 cup Pecan nuts-roughly chopped

  • 1 cup Milk

  • 1 cup Raw sugar

  • 1 cup Dessicated coconut

  • 0.25 cup Sultanas

Directions

  • Place all ingredients in a bowl and mix until well blended.
  • Pour into a greased loaf tin and bake at 180 degrees for 1 hour.  That’s it!

Notes

  • Easy Carrot and Pecan Loaf freezes well.  Cool to room temperature and double wrap in plastic wrap.
  • Freeze for up to two months.
