Banana Bread In A Mug. Got a semi-smooshed banana going a bit brown in the bowl? Use it to make yourself an old-school treat, cooked conveniently in a coffee mug in the microwave! Simple!
As always, with most cakes in mugs, you are better off using a large mug, combining the ingredients in another bowl or jug and pouring it into the mug. I keep batches of the dry ingredients pre-mixed in sandwich bags and add the wet ingredients when its time to bake.

Ingredients

1.5tbspSugar
2tbspBrown sugar
0.25tspBaking powder
1number Egg
0.25tspVanilla extract
1tbspvegetable Oil
1tbspMilk
1number ripe Banana-mashed
Directions
In a bowl, or in a large mug, combine the flour, sugars, salt, baking powder and egg and mix until just combined.
Mix in vanilla, oil, milk and mashed banana.
Pop into the microwave for between 90 seconds to 2 minutes, depending on how you like your banana bread consistency.

You can add whipped cream on top or for a healthier version some yoghurt.
