Apple Galettes

Ingredients

  • 2 sheets puff pastry

  • 0.5 cup cream cheese

  • 2 pink lady apples – cored and peeled

  • 0.5 cup apricot jam

  • Icing Sugar to serve

Directions

  • Preheat the oven to 200 degrees. Cut each piece of pastry into six rectangles (cut in half one way, and thirds the other way).  Cover two flat baking trays with baking paper and evenly space out the rectangles on each piece.  Warm the cream cheese gently (in the microwave) and gently spread evenly on the pastry.  Very thinly slice the pink lady apples and layer neatly on each galette.
  • Bake for 10 – 12 minutes and brush with the warm apricot jam (to glaze).  Dust with icing sugar and serve immediately.

Notes

  • The Apple Galettes can be served with fresh cream and ice cream or just on their own!
