Ingredients

  • 1 1 large sweet potato (about 300 g)

  • 1 tsp 1 olive oil

  • 1/4 tsp 1/4 salt

  • 2 2 slices Butterkäse cheese (about 60 g)

  • Freshly ground black pepper, to taste

Directions

  • Preheat oven to 150°C.
  • Wash and dry the sweet potato.
  • Rub the sweet potato with olive oil.
  • Sprinkle salt evenly over the skin.
  • Place the sweet potato on a lined baking tray.
  • Roast the sweet potato for 60 to 80 minutes until very soft.
  • Turn the oven off and leave the sweet potato inside for 60 minutes so it stays warm.
  • Remove the sweet potato from the oven.
  • Slice the sweet potato open lengthwise.
  • Insert the Butterkäse cheese slices into the centre of the potato.
  • Allow the cheese to soften slightly in the warm potato.
