Crunchy Chicken Bites

Ingredients
2 cups Cornflakes-80 grams
1 number Egg-lightly beaten
2 tsp Lemon rind-finely grated
2 tbsp Lemon juice
600 gram Chicken mince
1 cup Sage and onion stuffing mix
Directions
- Pre heat oven 200c.
- Line tray with baking paper.
- Place cornflakes in a snap lock bag.
- Using a rolling pin lightly crush cornflakes into small crumbs.
- Transfer to a small dish.
- Combine chicken, egg, rind, juice and stuffing mix in a large bowl.
- Season with salt and pepper.
- Roll tablespoons of mixture into balls, roll into cornflakes.
- Place on tray, spray with cooking oil.
- Cook for 20mintues or until chicken is cooked through.
