Ingredients

  • 4 cups Stock  liquid chicken stock, salt reduced

  • 2 tbsp Ginger fresh, peeled and sliced

  • 2 Garlic Cloves peeled and sliced

  • 2 Spring Onions sliced

  • 1/2 cups Noodles preferably wide rice noodles, cooked according to package instructions

  • 1 Carrots chopped

  • 1/2 cups Parsley chopped

Directions

  • Prepare noodles and place a saucepan on medium high heat.
  • Pour in chicken stock.
  • Bring to the boil then turn heat to low to simmer.
  • Add ginger, garlic, carrots and spring onion.
  • Simmer and then add in noodles.
  • Garnish with parsley before serving.
  • Get well soon!
