I don’t know about you but on the days I just can’t be stuffed cooking but I don’t want full-blown take away I turn to my local charcoal chicken.

Unfortunately, my kids decided the old chicken, chips and coleslaw just didn’t cut it anymore. So I reinvented it!

And they love it! A good ol’ charcoal chook and pack of pita just became a perfect springtime dinner, school lunch, weekend lunch or better yet, picnic food!

Juicy, smoky charcoal-grilled chicken stuffed in pita bread with fresh vegetables and sauces, delivering a flavorful and satisfying handheld meal.

Ingredients

  • 1 Roast or Charcoal Chicken, sliced like you would a roast

  • 1 pack Pita Pockets

  • 1 Tub Hummus

  • 1 cup Baby Spinach

  • 1 Cucumber, thinly sliced

  • 3 Spring Onions, sliced

  • 3 chilli, sliced

  • 1 cup Red cabbage, thinly sliced

  • 1 tbsp Sriracha Mayo

Directions

  • Spread hummus on the base of the pita bread
  • Top with baby spinach, spring onions, chilli, cabbage and chicken.
  • Squirt with sriracha mayo and get stuck in! We generally fold the pita over like a taco, but hey, I won’t even judge you if you use a knife and fork! (Okay, that a lie, I will judge you, I just won’t tell you!)
  • TIP: Get creative with these! If you love coleslaw, dollop it on! If you’re a feta freak, add some feta!
