The most wonderful time of the year is almost upon us, and between finding the perfect gifts for loved ones, preparing a meal for Christmas lunch and getting the kids into bed before Santa arrives we can sometimes forget about one very important Christmas tradition – Santa’s cookies and milk.
 
To give Santa the energy that he needs to make it through a night of delivering presents, Callebaut Chocolate Hero Darren Purchese has put together a delicious recipe for Santa’s Gold Chocolate & Coffee Cookies.
 
With Callebaut’s Gold caramel favoured chocolate for some festive cheer and coffee for an energy kick, these cookies will have the kids (and parents) at the top of his nice list.

Rich chocolate and coffee cookies with a festive golden touch. Perfect for holiday gifting, Christmas parties, or a cozy seasonal treat.

Ingredients

  • 220 gram Unsalted butter

  • 200 grams Soft light brown sugar

  • 180 grams Caster sugar

  • 1 tsp Salt

  • 1/2 tsp Bicarbonate soda

  • 2 Eggs

  • 350 gram Plain flour

  • 50 grams Cocoa Powder

  • 50 grams Coffee powder

  • 150 grams Callebaut Dark Chocolate (plus extra for baking)

  • 250 grams Callebaut Gold Chocolate (plus extra for baking)

Directions

  • Method:
  • Preheat oven to 170°C
  • Cream the butter, brown sugar, caster sugar, salt & bicarbonate soda together with a beater.
  • Mix for two minutes on a medium speed and then scrape down the sides.
  • Mix for three minutes on a medium to high speed then scrape down sides.
  • Add the egg gradually while continuing to beat on a low to medium speed.
  • Add all egg in and mix well before scraping down the sides.
  • Add the flour, cocoa powder, coffee & chocolates and beat slowly until it is all incorporated.
  • Weigh the mix into 85g balls and chill.
  • Bake in an oven for 17 minutes, remove from the oven and press gently with a weight.
  • Add dark chocolate & ‘Gold’ chocolate buttons to the top and melt.
