Ingredients

  • 1 kg Carrots, chopped into 3

  • 1 tsp Cumin, ground

  • 2 tsp Harissa

  • 3 number Garlic cloves

  • 2 tbsp Red Wine Vinegar

  • 2/3 cups Olive oil

  • 1 tsp Ground ginger

  • number Salt and pepper

Directions

  • Preheat the oven to 180 degrees
  • In a roasting pan, add the carrots, garlic and drizzle the olive oil.
  • Roast for approximately 30 minutes until golden
  • In a processor add all of the ingredients except the olive oil and blitz until smooth
  • Gradually add the olive oil on a low speed until well combined
  • Allow to completely cool
