Aussie Christmases are often really hot. A fresh simple refreshing watermelon salad goes perfectly with seafood! It’s quick and requires NO cooking!

Try out this tasty and zesty salad – watermelon really is mouthwatering during our summer Christmas days. Blend watermelon and some beautiful goats cheese and you have one cracker of a salad! It’s super subtle so not too overpower any of your other meals served on the day and it compliments prawns nicely.

Ingredients

  • 1/4 number Watermelon, cubed into 2cm peices

  • 100 gram Feta or goats cheese

  • 1/2 Bunch mint leaves, torn

  • 1 Red Onion, thinly sliced

  • 1 tbsp Red wine vinegar

  • Salt and pepper

  • 1 tsp Olive oil

Directions

  • Place the slice onion into a small bowl and add the red wine vinegar, salt and pepper and let it stand for approximately 10 minutes
  • In a salad bowl place the watermelon and mint, add the onion and top with feta or goats cheese. Drizzle with olive and enjoy!
