Herby Cous Cous Salad

Vibrant herby couscous salad with fresh herbs and dried cranberries.

Who doesn’t love a quick filling salad that goes with everything! Its super fresh and tasty! I like to cook my cous cous I stock instead of water adding that extra flavor.? Anyway you serve this salad either on its own, as a side or stuffed into a capsicum for roasting, it is sure to be a winner.

Ingredients

  • 1 cup Cous cous

  • 1 cup Stock, boiling temperature

  • 1 Lime, Juiced

  • 1/2 cups Parsley, chopped

  • 1/3 cups Craisins

  • 1/3 cups Pistachios, Chopped

  • 3 Spring onions, thinly sliced

  • 1 tbsp Olive oil, to dress

Directions

  • Cook the cous cous as per packet instructions (using stock instead of water).
  • Fluff the cous cous with a fork.
  • Add all of the other ingredients.
  • Squeeze over the lime juice and add some pepper if desired.
  • Toss well.

Take it to work the next day or use it with other dinners throughout the week, try out this herby cous cous salad!
